Living in a van you have limited opportunities to get to a microwave, but it’s not impossible; some service stations will have microwaves available for customers to use. I don’t keep alcohol in the van ( I just don’t think it’s a good idea) but this butterscotch sauce recipe is one I used to make fairly regularly when I was at university and lately I’ve been thinking about it a lot:

Poured over ice cream…
Soaked into a sponge cake…
Dipping fresh fruit into it…
Drizzling it over bananas and mascarpone in a toasted sandwich…
Drenching chocolate pudding with butterscotch sauce and making it oh so decadent…

hmmm, are you hungry yet? I am.

This sauce has three ingredients, all cupboard staples and can be made in just a few minutes. I can’t have it just now, so I want you all to enjoy it instead!

Don’t be put off by the rum, the alcohol will all burn off, making this butterscotch sauce recipe family friendly!

Butterscotch Sauce Recipe

1/2 cup of brown sugar,
1/4 cup of butter,
1/4 cup of rum, (other alcohols or even water will work, but it will affect the flavour)

Stir together, microwave on high for 2 mins. Reach into the microwave and stir inside. As you well know, microwaves heat food unevenly, and sugar can get very hot indeed, you don’t want to be too close if a pocket of hot sugar goes pop. Best method for any liquids you’ve heated in the microwave is to give it a stir before you take it out.

Microwave on high again for 2 more minutes. The ingredients will all have mixed together and formed a delicious brown syrup.

If you feel it’s a little thin you can microwave again, but do so in shorter bursts until you reach the desired consistency. This is one of those things that will go too far the other way if you don’t focus on it. If you see the syrup bubbling very slowly while it’s being microwaved, it’s time to stop. That’s probably a sign that it will set hard, rather than making a good sauce. Still tasty, but more of a challenge to eat.
